Today we would like to present you a delicious recipe for your healthy lunch. Our gnocchi with homemade pesto and mozzarella can be made quickly and easily at home.

Gnocchi with homemade pesto and mozzarella cheese

Gnocchi can be used in a variety of ways. The small dumplings are often equated with pasta, but they are usually made from potatoes. They provide a good base for many hot and cold dishes. However, gnocchi are especially perfect for you when you don't have much time and want to conjure up a delicious and quick lunch.

Gnocchi can combine healthy eating and pleasure

In today's recipe we show you an Italian version of gnocchi. Our homemade pesto with basil and pine nuts is particularly healthy and contains many important nutrients. Basil has an antibacterial effect, strengthens the immune system, protects the heart and circulation and helps the body with infections. Among other things, pine nuts contain large amounts of the trace element selenium. This substance supports our immune system and protects our body from the so-called "free radicals".

Ingredients (2 people) :

20g pine nuts
½ clove garlic
25 g basil (1 bunch)
5 tablespoons olive oil
20 g Parmesan cheese (1 piece)
Sea salt
Spelt - Gnocchi
Spinach
Mozzarella
Tomatoes

Preparation:

  1. Slowly roast pine nuts in a pan without fat. Take them out and let them cool down.
  2. Wash basil and shake dry, pluck the leaves.
  3. Crush peeled garlic clove, some salt and pine nuts in a mortar. Add basil, crush and add finely grated Parmesan cheese as well. Crush, then gradually pour in oil until a creamy pesto is formed. Season to taste with salt.
  4. Lightly heat a pan with oil and fry the gnocchi until golden brown, then dress with the pesto. Serve with garnishes such as tomatoes and mozzarella.
